Trevor from Community Cultures will be our guest speaker/educator at our February meeting at Velum Fermentation. Trevor has been teaching fermentation for over a decade, with a focus on utilizing seasonal and regional ingredients in a wide range of fermented products. During our meeting, Trevor will give an overview of how he utilizes water kefir (tibicos) to make the live-cultured seltzers that he sells at local markets. As with all club meetings there will also be plenty of time to share homebrew and talk fermentation with Trevor and other attendees.
